HAYES, Dorothy (Hastie)

78, passed away peacefully at home on August 21, 2024 after a brief illness. Dorothy is survived by her loving husband of 55 years, Ernie, and her children, Christine (Kevin), Jane (Stefan) & Gary (Jen). She will be missed by her grandchildren, Matthew & Nathan and her many siblings, nieces & nephews. Her faith made being of service second nature to her. She remembered everyone and would drop everything to be there when needed. Family meant the world to Dorothy. It was important to her that we gathered often and stayed in touch. While she may be gone from this earth, you can all guarantee that she will be watching over you to do as she said and make her proud. Saturday card nights will not be the same without Dorothy. Someone else will have to pick up in her place making the strangest bids while playing Oh Crap. Dorothy’s butter tarts were always requested and a staple at every gathering, bake sale and celebration. Not many can replicate, but here is the recipe in case you want to try: 

Pastry
1 lb Tenderflake lard, 1 egg, 2 tbsp vinegar, 5 cups all-purpose flour, 1 tbsp white sugar, cold water.
Mix lard & flour together. In a 1 cup measuring cup, mix egg, sugar & vinegar and top up with cold water. Add to dry ingredients and mix well. Pastry will roll out better if it is chilled. 

Filling
1 egg, 1 cup brown sugar, 1 tsp vanilla, 5 tbsp melted buttery 2 tbsp milk. Multiply ingredients by the number of dozen tarts being made: Stir ingredients well. If raisins or pecans are wanted in the tart, add to the tart shell before adding filling mixture. Bake tarts at 395°F for 10 mins, reduce heat to 375°F and bake for an additional 7 mins. 

Visitation was held at the Graham A. Giddy Funeral Home in Fergus on Wednesday, August 28, 2024 from 2-4pm & 7-9pm. A funeral service will take place at Knox Presbyterian Church in Elora on Thursday, August 29, 2024 at 11am, succeeded by interment at the Elora Municipal Cemetery. Following the service and interment, guests are invited to join the family at the Elora Legion for a time of fellowship and refreshments. In lieu of flowers, donations may be made to Knox-Elora Presbyterian Church.
